Healthy Living Photo Thread v. What did you cook today?

The old 'what did you last eat' thread got pushed beyond page 2, so I'm starting a new one!

The twist on this one is that you should post a photo of something healthy you cooked or created today. When I cook something healthy it's an accomplishment for me so I like to show it off to someone =D Plus it's motivation!


Dinner today was:

Baked salmon fillet, quinoa and couscous mix, and edamame

Excellent thread idea, chica <3 I'm cooking a chicken pasta dish tonight, but will have the sauce atop vegetables. I shall take a photo! Pop Popavich (my husband) and i made lamb koftas from scratch on Friday night (we even minced the lamb ourselves from lean pieces - that's f**king teamwork =D) and served it with a Greek Salad. It was really yummy so we're making it again next week - i'll definitely take some photos!

PS: Both of those dishes look delicious and now i'm hungry :D
 
I made this on the weekend from a recipe and it was lovely - poached chicken breast, red grapes, toasted walnuts, blanched green beans over frilly lettuce with a home made basil mayo.

I agree with Samadhi, those meals above look great, especially the salmon and quinoa, I love quinoa.

I freaking love quinoa - i've been on the bandwagon for about 4 years, and use it as a replacement for so many things. I also have it for breakfast with rice milk and stewed apple. We buy it in 12kg lots =D

Damn it - I had a very healthy (and quite good looking) dinner - Veggie soup followed buy chicken / onion 'stir fry'.

Low carb / low fat / low sodium / low calorie etc (I'm on a bit of a weight loss kick and I have lost 4 kgs the last few weeks :))
 
Ahaha, I'm right there with Bearlove in that I had an awesome looking and healthy lunch consisting of pasta with bagged "vegetables" including red pepper, corn, green beans, carrots, lima beans, ... Can't think of what else was in there at the moment. But, it was def. worthy of a picture. ;)

I just like taking pics of stuff I make sometimes because it makes me feel cool %) Especially when I make new concoctions (new, for me) like this:

I'm a froyo freak. If you buy it at the store it's expensive and has all kinds of weird ingredients, plus lots of calories. Since I need something sweet most days, I started making this little mix:

1/2 can Trader Joe's Light Coconut Milk (1/2 a can is 125 calories and 10g fat)
1.5 cups of Trader Joe's frozen mango chunks (50 cal)
1 small kiwi, peeled and diced (25 cal)
1 tablespoon truvia (0 cal)
1 teaspoon water (0 cal)
Total 1 large serving = 200 cal, 10g fat

and BLEND! Then put into a tupperware container and freeze for at least an hour or so. It's so good! It's not fat free obviously, but you could easily substitute the coconut milk for fruit juice or water. I just like it creamy, and although it does contain some fat, I still consider the ingredients of this to be much healthier than the frozen yogurt you'd find at the grocery store. I might try making one with banana and pineapple next time.

made a lean turkey burger seasoned with salt, pepper, and garlic. on a small ciabatta roll with tomato slices and avocado and a slice of colby jack cheese. nom.

Your salmon looks like it's cooked just how I like it SirTophamHat, nice and rare.

No photo tonight as I spent the day taking photos and was a bit over it. We had an awesome dinner though - kettle bbq grilled peri peri chicken, baked potato, avocado and a huge salad with gourmet lettuce, sliced radish and a classic French dressing. Was delicious.

I probably ruined the health factor by having a g&t and lime but I prefer to think of that as being therapeutic ;)
 
I had a mushroom omelet, wholemeal toast and green salad with french dressing tonight. It's amazing that something so simple can be really satisfying.

^ It amazes me how you're able to take such beautiful photos of ordinary looking food! Makes it look very interesting. :)

I still haven't gotten around to photographing my meals. Maybe later, but probably not. 8)
 
I made an omelette for dinner last night too. Mostly out of necessity cuz I had nothing else in my fridge :p
I love having 'breakfast' for dinner though.
 
^ Indeed! I don't do eggs any more at home, but I used to love making a fritatta for dinner.

Haven't been photographing my food of late, but I'm putting together a raw lasagne that I should take a picture of once I serve it.
 
Thanks addictivepersona :):), I have a decent camera and lenses though. I would love to see some of your meals.

Dave I would love to see that raw lasagna also - I've been fascinated by raw food recipes of late.
 
I'll post a photo once it gets made. Probably tomorrow.

I actually went to dinner with a couple of friends to a raw vegan place. Had delicious corn/hemp nachos with spicy cashew 'cheese', dried tomato and sunflower seed 'refried beans', goji/tomato salsa and macadamia/dill 'sour cream'. SOOOOOOO GOOOOOOD!
